Nut Free Energy Balls


I made these lovely energy balls for my daughter’s school healthy bake sale and they were such a hit I thought I’d share the recipe with you.

The beauty of these is that they are nut free, so safe for school pack lunch boxes and after school snacks. They contain good fats, protein and fibre, which in combination stop sugar spikes and help to maintain energy levels. Plus they are also packed full of brain nourishing nutrients such as oats, sunflower seeds and coconut oil:

Recipe:
50g sunflower seeds
15 dates chopped
2 tbsp oats
1/2 tin kidney beans
2 tbsp coconut oil
1 tsp cinnamon
Grated zest and juice 1/2 orange
1 tbsp cacao powder
Handful of desiccated coconut

Start by chopping the dates, then place them in a bowl with the zest and juice of half an orange.

Grind the sunflower seeds in a food processor until they resemble a rough flour.

Add the dates, along with rest of the ingredients apart from the desiccated coconut and blend until it forms a sticky dough.

Roll a tablespoon of the mixture into balls and coat in desiccated coconut.

Place in the fridge to chill and firm up for 10-15 minutes and enjoy.
